It’s super simple yet a crowd pleaser. Everyone has their different takes on the classic but this is the ultimate potato salad recipe. It’s light, moreish and never lasts longer than a day in my house. Perfect for summer picnics, a side dish for a BBQ or something to jazz up your leafy green salad. The zingy taste of lemon makes the creamy mayonnaise refreshing. Ok, this isn’t an M&S advert. It’s just really good – trust me!
In this heatwave the UK is having, salads and ice lollies are all I can bare to eat. I’ve made vinaigrette salads, Caesar salads, pasta salads but none are fought tooth and nail for, like my ultimate potato salad. It’s the first recipe I ever tried and I have stuck to it like glue. I love it. Steven (my fiancé) loves it so much, I served it next to pizza and he ate my potato salad first. If that’s not proof then I don’t know what is!
What is it good for?
I’ve taken this dish to a handful of family parties/BBQs and it has always been well-received. I highly recommend that you make a big batch of this to take to your next picnic, BBQ or pot luck. Even if you’re not going to one, make a big batch for yourself, leave it in the fridge and dip into it whenever you want. For instance, have some with your lunch, as a snack or plop it on your plate to accompany your dinner.
Although this recipe is amazing in itself, I will allow you to add some extra things, if you so wish (not that you need to because it’s amazing). For example, you could add: bacon, chives, mustard, sweetcorn (if you’re that way inclined), dill (good if you serve it with fish), dried onion flakes or croutons. The next time I make this, I really want to add bacon to it. Anyway, here is the recipe for the Ultimate Potato Salad.
Ultimate Potato Salad Recipe
Ultimate Potato Salad
- 450 g white potatoes peeled, chopped and cut into bite-sized cubes
- 6-8 tbsp mayonnaise according to taste
- 2 tsp salt
- 2 tsp pepper
- 1 lemon juiced
- 5-6 spring onions chopped
- Boil the potatoes in water for 10-15 minutes until semi-soft.
- Drain and allow to cool.
- In a bowl, cover the potatoes in the lemon juice.
- Add in the mayonnaise and the salt and pepper according to taste. Mix thoroughly ensuring you don't squash the potato cubes and make mashed potatoes.
- Once you're happy with the taste, add in the spring onions and mix in.
