This is the ultimate summer dinner! The lemon and garlic salmon is so refreshing and light and who doesn’t love potatoes and butter? Match made in heaven. Did I mention that you can make this in 25 minutes? Another plus! You can use any veg you like but I love asparagus and try to take advantage of eating it while it’s in season.

For the Herby Buttery Potatoes, I usually use dried herbs however I had some herbs in the garden that were doing really well makes a change) so I used those as its more aesthetically pleasing.

I love to make this in the summer when my herb garden is thriving and honestly, anything lemony just screams summer to me because it’s so refreshing. Lemon and garlic go so well together and is always a crowd pleaser so this would also be an amazing dish for a summer dinner party!

You can make this in less than 30 minutes which is always a bonus for me because (especially in the summer) I don’t like a long-winded recipe that requires me to stand over a hot stove for an hour. You just need to put the salmon in the oven, put the potatoes on boil and you can have a relaxing sit down (maybe with a cheeky Pimm’s) or prepare a salad in the meantime.

Another benefit of this dish is that it is really healthy! The salmon doesn’t require any oil or additional fat. You don’t have to serve this with herby buttery potatoes, you can substitute this for brown rice, more steamed veggies or homemade salad.

Lemon & Garlic Salmon with Herby Buttery Potatoes

Ingredients
  

For the Lemon & Garlic Salmon

  • 2 fillets salmon boneless
  • 1 lemon
  • 2 tbsp garlic chopped
  • 2 tsp parsley dried

For the Herby Buttery Potatoes

  • 350 g potatoes (peeled) or new potatoes
  • 4 tbsp butter
  • 2 tsp mixed herbs dried

Instructions
 

For the Lemon & Garlic Salmon

  • Preheat the oven to 180°C fan.
  • Place salmon fillet on a large square of tin foil and season lightly with salt and pepper.

  • Cut 1/4 off the end of the lemon and squeeze the juice over the salmon.
  • Evenly cover the salmon in 1 tbsp of the chopped garlic.
  • Cut off a wedge of lemon and place in the middle of the salmon.

  • Sprinkle over the herbs.

  • Fold the salmon into a tin foil parcel and place on a baking tray. Repeat with the other fillets.

  • Place the baking tray into the oven and cook for 20-25 minutes.

For the Herby Buttery Potatoes

  • After you've placed the salmon in the oven, boil the potatoes in a saucepan of water until soft but still hold their shape.
  • Drain the water away and toss the potatoes in the butter. Sprinkle over the herbs and mix gently.
  • Once you've taken the salmon out of the oven, unwrap the tin foil parcel and serve the salmon on a plate with the herby buttery potatoes and seasonal veg.

I want to use this part of the post to talk about National Geographic For Kids. I remember as a kid, I spent my summers reading my NatGeoKids magazine. Every time it came through our letterbox, I would get so excited because it was like an escape for me. I was very curious about the world and a huge animal lover (still am). This allowed me to learn about, not only my local wildlife and animals, but others around the world. This was the magazine as a kid that made me want to become a marine biologist when I was older because I was fascinated by marine life.
